This is a simple way to prepare a turkey without stuffing. The secret ingredient is butter - it enhances the bird's natural flavour. When the turkey is done, the juices may be used to prepare a gravy by adding cornflour 1 tablespoon at a time until the gravy begins to thicken.

Minced turkey makes a tasty and healthy burger. It's even better with feta cheese and olives. Serve these delicious Greek-inspired burgers with sun-blush tomatoes and baby greens in pitta bread.

This isn't your usual chilli con carne. Black beans and turkey mince make for a delicious twist on the classic. This hearty soup is an easy - and healthy - way to feed a crowd, and also freezes well. Top with grated Cheddar.

The spicy aromas of this satisfying salad make it tempting fare at any time of year. The rice, with its slightly chewy texture and Indian spicing, provides the perfect backdrop for tender turkey (or chicken), crunchy raw vegetables, sweet grapes and toasted nuts. It's a great way to use up leftover roast poultry.

The tanginess of citrus fruit marries well with poultry. Here, orange and lemon, with honey and shallots, create a tasty sauce for turkey escalopes, served on a stack of green beans. Serve with steamed new potatoes in their skins.

A small turkey like this is amazingly economical. It will give enough meat for at least 8 portions, or you can serve 4 people and have plenty of leftovers for sandwiches, salads and other dishes. Don't forget to keep the turkey carcass to make stock for soup.

These are an all-American favourite. As the name suggests, they have a messy appearance – a bolognese mixture served between wholemeal rolls – but it's a recipe all the family will love, and it can be prepared ahead. Lean minced turkey is used here as a lower-fat alternative to minced beef, but you could use either.

Dried apricots moistened with orange juice, then wrapped in smoked turkey rashers make a tasty snack to pass round with drinks, as well as an interesting garnish for a festive roast chicken or turkey. Take care when grilling turkey rashers – they cook more quickly than bacon and, because they contain no fat, will dry out if overcooked.

This coarse-textured pâté, deliciously flavoured with garlic and fresh coriander, combines minced turkey and turkey livers with lentils for a starter that has considerably less fat than a traditional pâté. Serve with toasted slices of brioche or other bread, plus some crisp vegetable sticks and crunchy radishes.
