Made with minced turkey, these burgers are generous in flavour and lean on fat, for a satisfying dinner that's quick to make and a great favourite with children. Serve in muffins, baps or ciabatta rolls.

This is a dish you will find wherever Chinese culture flourishes, no matter how far from China's shores. Combining fresh Chinese vegetables with bits of turkey or chicken is a great way to stretch a small amount of protein. Use a non-stick pan or a heavy, well-seasoned frying pan so that you need only a small amount of oil.

This is a simple recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well.

Griddling is an ideal way to cook turkey steaks quickly. These have a punchy seasoning and are partnered with sweet and tangy mandarins. Serve with warm chapattis and a salad of bean sprouts and watercress. Delicious!

The whole family will enjoy this juicy salad with hot turkey. Serve it on its own, or with a jacket potato for a main course.

These are an all-American favourite. As the name suggests, they have a messy appearance – a bolognese mixture served between wholemeal rolls – but it's a recipe all the family will love, and it can be prepared ahead. Lean minced turkey is used here as a lower-fat alternative to minced beef, but you could use either.

The tangy fruit flavours of tropical pineapple and tart cranberries are the perfect partners for these lightly spiced meatballs.

This frittata is a great way to use up leftover turkey and pasta, but if you have some leftover chicken or ham, use that instead.

Tomatoes – used here in a salsa – contribute the heart-healthy phytochemical lycopene.

Summer berries have to compete with one another for attention, but come late autumn, the cranberry stands alone. Its jewel-like colour makes it not just an attractive addition to any dish but a healthful one as well.

Although traditionally made with chicken, my recipe uses turkey, due to there being not much difference between the two when cooked and also because it is generally cheaper to buy. This recipe also uses a very cheap yet simple ingredient, fresh beansprouts, which really add to the texture of the dish. I also tend to make the sauce using a simple but effective Discovery packet mix which just cuts down preparation time but doesn't hinder the quality of the final dish.

This is a lovely crunchy salad for winter, full of contrasting tastes and tossed with an unusual dressing made from cranberry sauce and walnut oil. Red cabbage makes an interesting base, but does tend to stain the other ingredients, so serve the salad as soon as everything has been mixed together.

Turkey and spicy chorizo sausage combine well with vegetables and lentils, which are naturally low in fat and a good source of fibre, to create this hearty and flavourful pan-fry. Serve with a green salad.

Sausages are enjoying a renaissance and now come in a wider range of meats and flavours. Here, delicious turkey sausages are simmered in a tomato and vegetable sauce with fruity cider. Delicious with crusty French bread.

Began eating these when I first went to Austria at age 3, and discovered the recipe from my fiancé's grandmother. A simple, easy and incredibly tasty method of cooking a variety of meats. Choose a healthier oil (sunflower, olive) for frying. I use quick cook chicken breast steaks and pork medallions cut thin and beaten too; traditionally veal is used. Serve with sauté potatoes and a green Styrian salad.
