This is an icing that is great for Halloween because it's green! It is also a great icing alternative for vegans. Lemon or orange juice can be substituted for the lime juice.

This cake is simply great with the odd ingredient of beetroot. It goes in the oven pink and comes out a nice rich beige colour. It's a great way to use up those extra beetroots you have from your garden. I often ice it with a cream cheese icing.

This is a moist fudgy type cake. Sweet but not extremely sweet and makes good use of courgette! You can ice it with chocolate icing or cream cheese icing.

Scrumptious American-style carrot cake is a great way to get children to eat vegetables without even noticing. The creamy icing here is lighter in fat than a traditional one, as it uses ricotta cheese.

This is the nicest cake I've ever cooked. I'll be cooking it for Xmas as my OH hates Xmas cake. Everyone I've ever given it to has said that it's lovely and I often get asked for the recipe. Nicest with proper carrot cake topping made with cream cheese. Variable cooking times, I just keep checking on it and do the skewer test.

Pecans add a lovely crunch to this delcious carrot cake but feel free to leave them out if you don't like nuts.

This is a very moist and light carrot muffin. It's not too sweet and not greasy like other carrot muffins/cakes. The white chocolate cream cheese icing adds just enough sweetness to round it off.

Excess courgettes on my allotment forced me to try other methods of using them up - it came to the stage of even friends were refusing to take them off our hands! This recipe is a great way of getting kids to eat more vegetables and children seem to love it.

Chocolate and courgette fairy cakes with nuts - what could be better? Children will never know they're eating anything but chocolate. Use pecans in place of walnuts if you like.

At the age of 57, I am ashamed to say I have never before made a Carrot Cake, the last cake I baked was over 30 years ago for my Step-Grandfather for his 70th Birthday). For some weeks now, I have been promising my Fiance John that I would bake him a carrot cake and finally today I have done it. I used some old recipe books that belonged to my late Mum Barbara and took a few hints from other suggestions and went with the flow.

This cake has so many surprise ingredients there are almost too many to list! Don't be put off by the veggies - the parsnip and courgette nicely complement the more typical cake ingredients of carrot and apple. The cinnamon cream cheese frosting is literally the icing on the cake!

This is a wonderful, light teatime cake that's not too sweet. Excellent way to use up all those giant courgettes from the garden!
