This recipe uses egg whites to keep the fat content low. You can find 500g cartons of liquid egg white at alot of supermarkets now, but you can of course use whole eggs if you prefer.

This is a very moist and light carrot muffin. It's not too sweet and not greasy like other carrot muffins/cakes. The white chocolate cream cheese icing adds just enough sweetness to round it off.

Excess courgettes on my allotment forced me to try other methods of using them up - it came to the stage of even friends were refusing to take them off our hands! This recipe is a great way of getting kids to eat more vegetables and children seem to love it.

This open sandwich of toasted ciabatta bread with a mixed pepper topping is typical of the style of food enjoyed in Mediterranean countries, where bread, along with plenty of fruit and vegetables, is a mainstay of the diet. A little chorizo sausage adds a spicy note to the sweet pepper mix.
