I'm not a lover of stews but my partner is so I started making this one for him. He loves it so he gets it every two weeks and complains if I suggest making a beef one instead. Also this needs to be made the day before you plan on eating it.

Also known as "carabaccia", this is a local specialty in Florence, and is hard to find even in cookbooks specialising in Italian soups! The effect should be rich and somewhat sweet (but not too much). Adding roasted garlic would be a good variation.

This is my gran's recipe. It makes a good amount, so be prepared to give some of it away - perfect for Christmastime. Serve with cold cuts, cheese or a Ploughman's lunch.
