These vegetarian maki rolls are easy to make, and you can add either crabmeat or smoked salmon if you prefer. Serve with soy sauce and wasabi!

A Japanese recipe for cucumbers marinated in vinegar, sugar, salt and ginger. So simple but so delicious!

It's so easy and tasty you'll make it for dinner tonight. If you make it for a party, I assure you everybody will love it! To add more colour, you could sautee pork with julienne red pepper and onion slices. That'll make this dish look a bit fancier.

The ingredients for this salad are presented individually on a platter rather than being mixed together, with a simple tahini-based dressing so everyone can help themselves. Typical of Japanese cooking, there is a fairly small amount of meat per person, but plenty of raw vegetables to crunch through and fill you up.

From the same botanical family known as laver in Wales, slouk in Scotland and sloke in Ireland, nori is a type of Japanese seaweed, sold dried in thin, dark-green sheets. The flavour is distinctive and savoury. Nori is usually combined with rice in Japanese cooking, but it is also good with vegetables, particularly potatoes.

This Japanese-style one-pot meal is great fun as a sociable dinner party dish, but it is also simple enough to serve as a midweek meal. Meat and vegetables are cooked briefly in stock, then the delicious stock is served as a soup at the end of the meal, so maximum vitamins and minerals from the ingredients are retained.

Teriyaki is a popular cooking style in Japan. It derives from teri, meaning ‘shine’, and yaki, which means ‘to grill’. The teriyaki marinade used to coat fish or meat is usually made with soy sauce, rice and sugar and can be bought ready-made from most supermarkets. It has an intense flavour, so you only need to use a little.
