I made this up one day. It takes a lot of work, but makes a lot of stew, and the leftovers just taste better and better each time you try it.

This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

Shin of beef and skirt are well-priced, have a great flavour and are ideal for using in slow-cooked stews with flavoursome root vegetables.

This gorgeous Greek casserole with beef and onions is perfect winter comfort food. Serve with lots of crusty bread to mop up the aromatic sauce. It is also typically made with rabbit, so feel free to substitute this if you wish.

Pueblo Indian tradition calls for the addition of corn or potatoes to this dish. Serve with a big green salad and a pile of warm tortillas. It also makes a wonderful filling for enchiladas.

Lentils, chickpeas and veggies in a highly aromatic stew. This is a delicious and hearty recipe that is worth the effort. I make this ahead of time for the week to come and it is always a hit. Optional garnishes are yoghurt, fresh mint and cayenne pepper.

In the galley, one-pot meals are simple and safe - especially when made in a pressure cooker. This is a brilliant solution when you've dropped anchor and are surrounded by friendly boaties just waiting for a newcomer to go visit ... and the aroma from your galley will have them rowing across in no time! Be diligent about shaking the pot, as below, to prevent sticking. Ingredients aren't always easy to come by in out-of-the-way sailing spots, so do this with whatever meat you can!

This is a nice winter stew or soup that everyone loves in my family. It is so comforting on a cold winter night, or it can be a Christmas main for vegetarians. It tastes wonderful the next day! Experiment with the vegetable combinations!

Chicken thighs are excellent in a casserole, being very tender and full of flavour. Fresh apricots and a bulb of fennel make good partners, especially when spiced up with cumin.

'Cacciatore' literally means 'hunter' in Italian, and this 'hunter style' dish makes good use of mushrooms (easily available to hunters trekking through forests!), onions tomatoes and herbs. If desired, serve over spaghetti.

A really yummy chicken casserole for 2-3 people. Perfect winter warmer, with just a hint of ale! Potatoes are on the top of the casserole so saves on washing up :-)
