A delightful dessert that combines traditional bread pudding with apples and a crumbly streusel topping. If you want to roll out your own shortcrust pastry, use it to line a 23cm (9 in) baking dish.

Compared to most cheesecake recipes, this version isn’t particularly high in fat, as it uses cottage and curd cheeses instead of the traditional cream cheese, and is lightened by folding in whisked egg whites before baking. The delectable filling is set atop a crunchy digestive biscuit and oat base.

An incredibly easy way to round off a dinner party - but only if they aren't driving! I like to serve two small scoops in tiny dishes with shortbread, biscotti or amaretti. You can vary this any way you like - try Cointreau or Drambuie (my favourite), or add a few drops of real vanilla extract or some of the vanilla seeds.

I first made this in my A-level Home Economics class - sometimes I get a craving to make it again. Usually in the summer! It's a very smooth solid dessert. I like to make it in individual ramekins and serve with fresh raspberries and cream. I buy the seaweed in a health shop in Donegal.

This is my version of a delectable pud I had in Milan. You could chill this before serving, but I like it warm. The rum at the end is optional, but makes for a nice presentation at a dinner party.

A gorgeously creamy leek soup with a sharp cheese and mustard kick. It makes a delicious lunch served with cheese and onion bread or walnut bread. Plus, it's vegetarian too!
