I had this in a restaurant and came up with a great recipe to mimic it. This soup is lemony and full of great dill flavours. It makes a popular first course and is a crowd pleaser for all ages.

This is an Iranian (Persian) dish and i found the recipe in an old cookbook. It says there are Vegetarian versions so if anyone has one, please let me know!

Marinating is the key to success for these tender, juicy and sweet-tasting kebabs. Just half an hour will add delicious flavours to the lamb, although overnight is better if you have time. Serve with a leafy mixed salad, and a bowl of plain low-fat yogurt mixed with grated cucumber and chopped fresh mint and flat-leaf parsley.

In this Middle Eastern-style salad, bulghur wheat and crisp colourful salad ingredients are tossed with a generous quantity of chopped fresh herbs and a light lemony dressing, then served with succulent pieces of lean lamb. It's the perfect dish for a relaxed meal. Serve with toasted wholemeal pitta triangles and plain yogurt.

Lavash is an unleavened flat bread popular in Armenia, Iran and Turkey. It is traditionally cooked in a tandoor, but you can use your oven! Great alternative to wraps and naan.

This is a traditional arabic recipe, passed down from my Palestinian grandmother, to my mother, and then to me. I always loved this as a kid, and being a vegetarian dish, was something i was keen to do as my mother always said it was so simple and tasty. Its also very cheap to make, and really nutritious. The secret is not to skimp on the onion, and to let the onion cook slowly for a long time, till almost brown, but still soft.

Mensaf is the national dish of Jordan. It is made on special occasions and traditionally eaten with your hands. It's hard to find the whey needed to make 'real' mensaf. It comes in a rocklike form and is diluted and used in place of the jameed in this recipe. Even without it, this recipe comes close to the real thing. Spices, onions, garlic and butter can also be added to season the goat milk sauce.

Guinea fowl, in season in autumn and winter, tastes like a cross between chicken and turkey, and is very lean. Here it's roasted with a fig and pistachio couscous stuffing and basted with a spicy lemon marinade to keep the meat deliciously moist. A leafy salad with fresh oranges makes a great side dish.

I had a minty lemonade when I was travelling in the Middle East. I wanted to try and immitate it. It cools you down on a hot summer day! Adjust the amount of mint to taste.

Chunks of lean lamb are gently simmered with dates in a richly spiced gravy, then piled atop couscous and pistachio nuts, and sprinkled with pomegranate seeds. Kefta are Lamb meatballs, flavoured with onions, herbs and spices. This is a North African dish and is a good one to try if you have friends round. You can serve the dish in the middle of the table and let everyone dig in.
