The easiest way to make this is with a slow cooker. The beef will fall apart easily with a fork, making it easy to shred. You can put the meat into the slow cooker either fresh or even straight from the freezer. Serve in floury baps or tortillas with shredded lettuce or coleslaw.

This recipe was given to me by my sister, who got it from a Hungarian lady in 1961.

Choose large oranges that are heavy for their size; they are the juiciest.

Flavourful beef dish using cheaper cuts of meat. Cut off only the outside fat, marbling in the meat gives flavour. Do not worry about any gristle as it will dissolve into jelly in the long cooking time. Substitute gluten-free or rice flour for a gluten-free dish. Put any leftover wine into small plastic food containers and freeze. It is ready to use, no need to thaw, and no waste of good wine.

Warm up on a winter evening with a nourishing beef stew, made extra-satisfying with low-fat, herb dumplings. Try serving with steamed broccoli, or a leafy vegetable such as spring greens or cabbage.

You can use fresh, raw, or cooked bones to make a meat stock, plus any lean meat scraps. Trim any fat or fatty skin from meat or bones before using for the stock.

Black Sheep Ale reminds me of walking the Yorkshire 3 Peaks last year. They serve 'Black Sheep Pie' along the route and I thought… I can do that. Well maybe anyway. You can do it with any other ale too I suppose, and I used to do something similar with Guinness, but found that it’s got a slightly more bitter aftertaste to it than the Black Sheep.

Beef Bourguignon is a classic dish of Burgundy, designed to celebrate the wines for which Burgundy is famous. The Bouquet Garni adds a special flavour to this Beef Bourguignon recipe.

Silverside is a lean cut of beef, but you can also use plain or salt brisket. The dumplings puff to twice their original size, so allow plenty of room in the casserole.

My mother used to make this and it seemed like she boiled the tongue forever. It's hard to believe now that as kids we used to fight over the tip, and the next day - tongue sandwich to school with lots of mayonnaise.

This takes some time, but is well worth the effort. I use a food processor. It is a hearty soup, great on a cold winter night. Serve hot, topped with soured cream.
