This delicious stew is inspired by my friend from Sierra Leone who often cooks for her family. Many ingredients can be modified. This is kind of a 'whatever is on hand' recipe. You can use a whole chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

The Parmesan is optional but I think it adds a needed finishing touch to the dish. You can substitute cauliflower for the red cabbage. Either way, this recipe is bursting with colour and flavour.

There's an easy to find (and make) kids meal out there on the web called Cowboy Casserole, which uses sausages and beans... I decided to make it for Leo yesterday and also to make a slightly different version for myself. I altered the recipe and gave it a Spanish twist - hence the name. This is a good one for a cold day.

Butternut squash has a lovely firm texture, ideal for cooking in stews. Combined with black-eyed beans, sweetcorn and red pepper it makes a nutritious family supper dish that is perfect for cold winter days. Serve with boiled rice or warm crusty bread.

Lemon and fennel bring wonderfully fresh flavours to familiar braised mince in this Italian-inspired dish, making this as good for al fresco summer dining as for a light supper on a winter evening. Serve plenty of bread or rolls to mop up the deliciously tangy tomato sauce, plus a crisp leafy salad.

This is a delicious meal that is so flavourful. You won't believe it's only 5 main ingredients. You can eat it on it's own but I like to serve it with mashed potatoes to soak up the delicious sauce. Set aside some of the fresh mint for garnishing.

Hearty fish steaks baked with garlic, tomatoes and herbs make a dish redolent of the Mediterranean coast. Try serving with rice or crusty bread and a green salad, or a side dish of green vegetables such as Roasted Asparagus with Caramelised Shallot Dressing or Braised Fennel (both on this website).

Take advantage of small, trimmed leeks, turnips and potatoes to speed up classic dishes with a ‘throw-it-all-in’ approach. Brown everything briefly to add flavour, then bring it together with a creamy sauce. Delicious!
