I personally think these are the best brownies in the world. Try them, I think you'll agree! To make the brownies rich and buttery, use melted butter instead of the vegetable oil.

The Americans know a thing or two about really wonderful fudge cake – this is based on an American recipe and uses oil instead of butter which cuts down on the saturated fat a little! We've done the hard bit for you by making Caramel which goes into making the easiest fudge filling you’ve ever seen!

Specially for the basic galley and lazy on-board cook! The chewy-crispy result is best by using butter and white sugar, but I've used uncoloured golden sugar, and margarine - and even wholemeal flour, but that makes it much heavier. You can also do without the chocolate chunks, or without the nuts, and even without both if you're desperate! Use whatever is in your galley cupboards - add glace cherries, or raisins, instead. Be imaginative! - But the best results come as below.

After lots of tweaking I have a fudge brownie recipe that is delicious! It's not cakey and it's nice and chewy, and has a gentle sweetness that doesn't over power. Fantastic hot with some cornish ice-cream! or cooled for a nice chewy snack.

One day I tried to make brownies for the hotel I used to work at. I asked a colleague to buy me pecans at the supermarket, but she couldn't find pecans, so I asked she just get me any kind of nut...then she bought me a packet of pistachios. In China we call pistachios "happy nuts". Normally chefs use pecans or other nuts for the brownies, but you must try the pistachio nuts, they taste great!

After tweaking a crepe recipe I came up with this incredibly delicious version -- chocolate crepe batter, with bananas and chocolate sauce! A very big hit with my friends! Top with icing sugar or whipped cream.

This taste likes the ones from the shop, however the coffee flavour does come through in the filling so you can maybe take that out. Enjoy!
