Monkfish tastes somewhat similiar to lobster, but is a lot less expensive. This dish is also healthier than fried fish, but still has a nice crumbly crust. Substitute any other firm white fish if monkfish is not available.

This sea bass rescipe has been passed down through generations its was made many years ago in Cyprus when the men came home from the fishing boats and they would cook the fish on the charcoal. The fish should be really fresh check the eyes the should be bright and shiny and it should not smell fishy. Good fresh fish smells of the sea.
