A wonderful Italian recipe for an uncooked sauce made with fresh garden tomatoes. You don't have to cook a thing except for the pasta!

This is a big hit with the kids as its easy to make and involves very little work. It can be made with or without mushrooms depending on your taste. My mum made it up when i was a kid and I cook it for mine now.

For the best flavour, add the dressing to the pasta while still hot, then serve warm. Or, if you have time, prepare the salad ahead to serve cold for a picnic. This colourful salad is a lovely no-fuss meal.

I am not suggesting for a minute that spaghetti carbonara can be a diet food. However, if you are a fan of this creamy, comforting pasta dish and balk at the calories, here's a method that shaves a few off by omitting butter and cream. It's still yummy though!
