Pronounced 'bun-yet,' this is an old Italian recipe from my Nonie's kitchen. It is made using mainly parsley and garlic and is meant to be eaten with crusty warm bread. It is almost sinful to share this secret recipe with the world, but I know you'll love it as much as my family and I do. Refrigerate overnight for best flavour.

This is a scrumptious use of leftover Christmas turkey. Serve on little gem leaves, or use to fill sandwiches. Then stand back and enjoy the compliments!

Fresh cranberries are cooked with orange zest, orange juice, lemon juice and brandy. This is a lovely holiday sauce to serve with roasts, and to put on the sandwiches you make with the leftovers!

A cheesy, satisfying lunch or light supper - this is most probably the world's most sophisticated toastie! Use Brie if you don't have Camembert to hand.

Much better than a standard turkey sandwich on boxing day. This a beast of a sandwich one for the boys, not a very lady like sandwich to eat. It can be an art to stack this sandwich but it looks and tastes great.

This is a chunky cranberry sauce with apple, sultanas and spices. I suppose it's more like a chutney, but either way it's great with leftover turkey on Boxing Day.

This is a delicious and quick way to use up leftover roast turkey or chicken. Serve the creamy turkey over squares of airy puff pastry for something of an improvised pie. Alternatively, serve the turkey over egg noodles or rice.

With its wonderfully contrasting tastes and textures, this salad makes a satisfying main course that is luxurious without containing a lot of saturated fat. It is the perfect recipe for roast turkey leftovers or high-quality cooked turkey bought from the deli counter in the supermarket. See more ideas at the bottom of this page for other flavour inspiration.

This variation on the classic egg mayonnaise uses little quail's eggs with a creamy yet light mayonnaise and yoghurt dressing. It is combined with mixed leaves, cucumber and slivers of succulent smoked salmon. All you need to accompany the dish is some brown or wholemeal bread.

Favourite Christmas flavours make this a most glamorous toasted open-face sandwich. If you keep a supply of bagels in the freezer, you can rustle up a great snack meal like this whenever you have some leftover turkey or chicken. Serve with a mixed fruit and vegetable salad.

It is a recipe given to me some years ago by a friend when we were chatting about using up left over turkey. I usually serve it with pickled red cabbage (shop bought), and crispbreads.

When you're feeling as stuffed as the turkey and can't face a sandwich or spending much time in the kitchen, try this light meal using the turkey leftovers.

These little toasted slices of baguette are an easy and delicious party nibble. Use Parmesan instead of Pecorino if you wish.
