My mother used to make this and it seemed like she boiled the tongue forever. It's hard to believe now that as kids we used to fight over the tip, and the next day - tongue sandwich to school with lots of mayonnaise.

These are an all-American favourite. As the name suggests, they have a messy appearance – a bolognese mixture served between wholemeal rolls – but it's a recipe all the family will love, and it can be prepared ahead. Lean minced turkey is used here as a lower-fat alternative to minced beef, but you could use either.

This makes a great vegan sandwich filling. You can replace the sunflower seeds with sesame seeds if you prefer. Try it on a toasted bagel with ripe tomato slices, or on granary bread with lettuce and onion.
