This is a cold, garlicky Spanish soup - perfect in summer, especially if you can't make it to Spain. Fresh almonds, just out of their shells, are traditionally used. This version calls for ground almonds, as fresh almonds are hard to come by here.

Cooked asparagus, diced cucumber and spring onion are folded into long-grain rice and chilled. Toss with mustard vinaigrette when ready to serve. A cool spring or summer salad chock-a-block with green veg.

Savoury aubergine with a hint of spice. Serve as a starter, side, or use to top toasties with lots of melted cheese. I recommend grilling these rounds rather than frying, but they are delicious either way!

An authentic Thai hot and sour soup. Do not attempt to omit the coriander, as this is essential. Use thai basil instead of regular basil if you can find it. Tom yum paste is hot, so try the soup before adding the chilli and decide if any extra heat is required. You can buy the paste in Asian supermarkets or there's a brand called "Thai taste" at Waitrose. This is well worth the trouble!

Mushrooms and bacon make a lovely pair. It can't get simpler than this recipe. Use cocktail sticks to hold the bacon in place while cooking. I usually have to make a double batch of this party favourite to satisfy our guests.
