This is a cold, garlicky Spanish soup - perfect in summer, especially if you can't make it to Spain. Fresh almonds, just out of their shells, are traditionally used. This version calls for ground almonds, as fresh almonds are hard to come by here.

This is a tasty and quick side dish. The cook time is just a guideline, feel free to cook this until the green beans are to your liking.

This combination is so good together and it's a great way to get your kids eating fruit. I make this for my daughter's lunch and she loves it.

This is a light summery pasta salad that I love because the flavours go so well together. Lemon juice and a drizzle of good olive oil finish everything off nicely. It does taste best when chilled for 1 or 2 hours.

Baking fruit brings out its flavour wonderfully, and a stuffing is a simple way of making baked fruit special. Here peaches are filled with a mixture of dried apricots, almonds and amaretti biscuits. Many other fruits – nectarines, apples, pears or quinces – can be prepared in the same way, to ring the seasonal changes.

The ultimate version of a peanut butter sandwich takes some good hearty bread packed with sesame and sunflower seeds, with sweet mashed banana as a perfect partner for the peanuts. Serve with crisp apple or fresh, juicy pineapple wedges for extra fruit value.

Although high in fat, nuts and seeds are extremely nutritious, and just a handful gives a satisfying crunch to this pilaf.

This recipe takes some time and quite a few baking trays, but it's well worth it. It makes plenty so you can give away as gifts with good coffee beans.

These are great for Christmas gifts. For a richer almond flavour, use almond extract or almond liqueur instead of the vanilla.

This dish of dates stuffed with chopped nuts was once savoured in Ancient Rome. You can replace the pine nuts with almonds if you prefer.

This is the easiest pesto recipe, using almonds instead of pine nuts. It can be prepared in 2 minutes after you toast the almonds.

This soup is native to Nigeria and many of my British as well as Nigerian friends have enjoyed it. It is a great soup for those who like to try something different every once in a while. Ground egusi seeds give this soup a unique colour and flavour. If you can't find egusi seeds, you can substitute pumpkin seeds. Any combination of crab, prawns and smoked fish can be used in place of the prawns.
