A delicious toasted muesli, this is made from a tempting mix of grains, nuts, seeds and colourful red and blue berries. Stirring maple syrup and orange juice into the mix helps to keep the oil content down, making this version much lower in fat than most ready-made ‘crunchy’ cereals.

Here's a new, healthy twist on these delicious and popular little Greek parcels. To boost the fibre and nutrient content, brown rice is used instead of the traditional white. In this attractive salad, full-flavoured shiitake and chestnut mushrooms are combined with slices of tender griddled duck, juicy orange segments, crunchy water chestnuts and rice, with a fresh ginger and honey dressing. Duck meat is in fact very lean, once the thick layer of fat and skin has been removed.

I have always loved Cajun foods but my wife doesn't like the spice - so I made my traditional Jambalaya without the heat. Everyone loved this recipe and I hope you will too.
