A small turkey like this is amazingly economical. It will give enough meat for at least 8 portions, or you can serve 4 people and have plenty of leftovers for sandwiches, salads and other dishes. Don't forget to keep the turkey carcass to make stock for soup.

These are an all-American favourite. As the name suggests, they have a messy appearance – a bolognese mixture served between wholemeal rolls – but it's a recipe all the family will love, and it can be prepared ahead. Lean minced turkey is used here as a lower-fat alternative to minced beef, but you could use either.

Dried apricots moistened with orange juice, then wrapped in smoked turkey rashers make a tasty snack to pass round with drinks, as well as an interesting garnish for a festive roast chicken or turkey. Take care when grilling turkey rashers – they cook more quickly than bacon and, because they contain no fat, will dry out if overcooked.
