Traditional Australian recipe, handed down from my mother. Her recipe has coconut and ginger in it which makes these especially good. Originally, these delicious bikkies were lovingly baked and sent in care packages to our soldiers at war.

This year, in a bid to maintain Christmas spirit despite the limited funds, we decided to make a variety of edible goodness for the family. It's a very simple gingerbread recipe, although cooking times do vary quite considerably depending on the shape you carve your biscuits into ...as I found out.

Both adults and children love these. Rice Krispies added to melted mars bars to make chocolaty, crispy and delicious treats. I can't eat wheat so this is great instead of biscuits or cake.

Have a go at making these old favourites yourself! They are sliced from a long piece of dough, which you can make ahead and store in the fridge or freezer. Bake the biscuits all at once or in batches, keeping the remainder of the dough chilled. It will keep for 2 months in the freezer.

This is a wonderful recipe when there are no eggs in the house and you have to make cookies. They are a very moist cookie and freeze well.

I think its very easy, well most of it sure is anyway! The only bit that i really struggled on was the mixing of the ingredients, mixing it into breadcrumbs with your fingers bit i actually found that it was easier with the dough whisks. plus it deduces your mixing time by about 5-8 minutes. from then it gets pretty easy with the rolling and cuttting and everything...!

Here’s a healthier version of a traditional favourite. Bake quick round biscuits, or buy some fancy cutters and encourage children to have a go at making gingerbread figures or stars, and give them dried fruit or nut decorations. Whatever the shape, theses spicy, crunchy biscuits taste terrific.

I really wanted to try to make my own Maryland brand cookies but I couldn't find a recipe that even looked like it would be anywhere close to a Maryland cookie. I read the ingredients listed on the back on the packet and found out that 1. they were made with vegetable oil, NOT butter and 2. they didn't have any eggs in them. They are basically chocolate chip shortbread made with vegetable oil instead of butter!You will need either a standing electric mixer or a handheld electric mixer.
