I bought a similar spread at the supermarket awhile back, and I thought that I could do it better and cheaper myself. I use tinned artichoke hearts, though you can buy fresh artichokes and cook them yourself.

Bulghur is coarsely ground wheat grains that have been parboiled, so it's quick and easy to prepare and makes an ideal storecupboard standby to use in salads as well as in hot dishes. This nutty-textured, colourful salad makes a great main dish for a summer lunch or picnic, and looks pretty enough for a special buffet.

This is a very mellow tasting dish that has the rich creamy taste of the coconut sauce with the crunchy texture of toasted cashews and soft, succulent prawns. Goes perfectly with steamed basmati rice and a nice Riesling or Gewurztraminer.

These disappear the minute they get set down on the table! These make great party nibbles - just double or triple the quantity depending on how many guests you have.

This soup tastes fabulous. The diced potatoes absorb the flavours from the herbs and vegetables to make a mellow complement to the mussels. Warm soda bread is an ideal partner, delicious for dunking and mopping up the last of the soup. To complete the meal, serve a light, fruity dessert for a refreshing, vitamin-packed finale.
