The easiest way to make this is with a slow cooker. The beef will fall apart easily with a fork, making it easy to shred. You can put the meat into the slow cooker either fresh or even straight from the freezer. Serve in floury baps or tortillas with shredded lettuce or coleslaw.

Apple purée gives this sauce a rich thick texture that coats meat well. It has a sweet spicy flavour, excellent on chicken or pork. It may also be stored in sterile glass jars.

This is a basic fruit muffin recipe. I use chopped apples, but any type of fruit may be added to make a quick and easy batch of fruit muffins.

These oven-baked beans are cooked slowly to create a richly flavoured vegetable dish – a revelation if you've only ever eaten the tinned variety. Serve alongside grilled pork chops, together with potatoes or bread.

This American-style hot sauce is inspired by what one finds on the table in the country's many Mexican and Tex-Mex restaurants, and gives just about anything the right amount of spice. You can use this as a table sauce, and spices can be adjusted to taste. Try it on burgers, tacos, barbecued meats and vegetables - the possibilities are endless!

It's an astonishingly basic combination of ingredients that brings tantalizing flavour. Great on spare ribs or chicken.

Being steamed rather than baked, this mixed-grain bread has a soft crust and close texture. It gets its dark, rich colour and flavour from molasses. It was created by American settlers in the days before most homes had ovens.

This tempting salad combines smoky ham, red onion, sweetcorn, canned black-eyed beans and lots of fresh coriander in a spicy soured cream dressing. For generous, meaty chunks of ham, buy pieces from the deli counter rather than thin pre-packed slices. Serve with tomato wedges and crusty fresh bread.

Pueblo Indian tradition calls for the addition of corn or potatoes to this dish. Serve with a big green salad and a pile of warm tortillas. It also makes a wonderful filling for enchiladas.

These healthy wraps flavoured with goat's cheese, rocket and dill spread make great light lunches, portable feasts and super-quick suppers. They will keep for a week or two, and can also be frozen.

"This flavourful barbecue sauce for ribs is just like the kind they serve at a famous restaurant in Montreal, Quebec, that has people lining up on the street any given night of the week. Don't' skip the lemon juice or cinnamon. Simmer the leftover sauce until sugar is completely dissolved and serve on the side for those who like their ribs dripping with flavour."

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

Pork has an undeserved reputation for being fatty. Modern breeding and butchery techniques mean that many cuts are now extremely lean.

This a recipe I came up with after getting a few ideas from a friend. The combination of chipotle chillies and coriander really completes this dish.

A typical Cajun recipe, this is full of spicy, complex flavours. With lots of rice and vegetables, it is a great dish to make a small amount of meat go a long way, and offers a healthy balance of protein and carbohydrate.

The simple, delicious flavours of this soup will make it popular with all the family. Try it for lunch at the weekend, served with plenty of crusty bread and fresh fruit to follow.
