This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

Try this tropical jam warm over pancakes and waffles, or spread on toast when it's cool.

An unusual twist on classic roast chicken, this recipe makes the most of the flavour of the fresh fruits.

This recipe is based on a traditional Caribbean favourite. It's made with black-eyed beans or red kidney beans, which are called peas in Jamaica – hence the name of the dish. Red pepper has been added for extra vegetable content and a small amount of lean, smoked bacon lifts the flavour.

This fabulous storecupboard dish tastes fantastic and is so simple to make. The addition of coconut milk gives it a real taste of the Caribbean.

Plantains can only be eaten cooked. Fried plantains are a traditional treat in Latin America and many other parts of the world. Overly ripe plantains work best for this recipe. If you want a savoury experience, serve these with salt. If you want something sweet, serve with sugar and cinnamon.

This is a very easy and warming stew that is perfect for the slow cooker. Easily tweaked according to your own taste and preferences. You can omit the salmon and have it as a vegetarian meal and adjust the amount of pepper depending on how hot you like it. I put this on in the morning before leaving for work and come home 9 hours later to a yummy dish! Serve with crusty bread or Jamaican sweet bread for extra authenticity.

Pelau is a stew from Trinidad made with either beef or chicken. The unique flavour comes from searing the meat in caramelised sugar then simmering with rice, coconut milk and peas. Serve accompanied with slices of tomato, avocadoes or cucumber.

Pepperpots are slowly cooked, spicy one-pot meals prepared on all the Caribbean islands. This version, using chicken rather than the more traditional fatty pieces of pork, also includes rice for an easy, oven-baked meal.
