An authentic Thai hot and sour soup. Do not attempt to omit the coriander, as this is essential. Use thai basil instead of regular basil if you can find it. Tom yum paste is hot, so try the soup before adding the chilli and decide if any extra heat is required. You can buy the paste in Asian supermarkets or there's a brand called "Thai taste" at Waitrose. This is well worth the trouble!

This is a spicy Thai-inspired salad. Double or triple the recipe to use for a buffet or summer barbecue.

When you're feeling as stuffed as the turkey and can't face a sandwich or spending much time in the kitchen, try this light meal using the turkey leftovers.

This popular Thai curry is most commonly made with beef, but is wonderfully flavourful as a vegetarian dish as well. Try making your own paste instead of using the store bought varieties.

Why go out for Thai when you can make it at home? This delicious Thai-style chicken satay recipe calls for chicken marinated in a peanut, soy and citrus sauce. Perfect for a party.

The authentic version of this soup has galanga, lemon grass and kaffir lime leaves. These are available in jars in some supermarkets but this recipe provides a similiar taste without the trouble of difficult to find ingredients.

Delicately flavoured Thai rice goes perfectly with tiger prawns, coriander and chilli for this fast, exotic dish. Lightly steamed vegetables are all you need to eat with it. Delicious!

A few storecupboard ingredients - canned coconut milk, canned tuna and frozen peas - combine with a few other flavours to create a quick and easy rich Thai soup. It is best served with a chunk of bread.

This curry is wonderfully fragrant. Serve it with jasmine rice and a side dish of Chinese cabbage or broccoli florets stir-fried with garlic and a little soy sauce. Packs of Thai fresh spices that include lemongrass, lime leaves and galangal are available from many large supermarkets.

If you prefer or can't find an unripe papaya, cucumber can be used instead. The ingredients in this Thai-style salad are mashed together into a chunky, pulpy mixture and topped with peanuts.

When I was in Australia for a year, I lived above a Thai restaurant. They made the best green curry I've ever tasted. I was a regular customer and I managed to persuade the chef to let me know how he made the curry. I've adapted it slightly to bring down the heat but it's still got a nice kick to it. Apparently the paste will keep in the fridge for up to 4 months! This one uses prawns but feel free to use chicken.

You can buy the rice paper spring roll wrappers in Asian shops. These rolls are not fried and taste best dipped in the hoisin peanut sauce. Delicious for a summer party.

Prawns are served with an intriguing banana, cucumber and mint salsa. It's definitely different. Serve with lime wedges.

The hotness of the garlic, chillies, lemon grass, and coriander is balanced by rich coconut milk and roast duck. This is a quick way to get dinner on the table, if you have a roast duck handy. It only takes 15 minutes to prepare and another 15 to cook.

This colourful dish is bursting with fresh flavours and deliciously contrasting textures. The dressing is completely oil-free, so although both the beef and nuts contain fat and the beef is stir-fried in a little oil, the dish is still light on the fat front. Also, no extra salt is needed because of the spicy dressing and saltiness of soy sauce.

Oven-baked crisps are not only healthier than those that are fried, their flavour is fresher and more concentrated too. Here, thin slices of beetroot and potato are baked in a hot oven to make dippers for a spicy South-east Asian mixture. If possible, slice the vegetables with a mandolin to ensure they are all an even thickness.
