After a painful (yummy, but ridiculously unhealthy) amount of experimenting with different recipes I came up with this one. I think it's pretty damn good, myself. Also, it's sooo much better if you can leave these in a fridge overnight, as this makes 'em far more fudgey (ie. far more YUMMY!) They go down great at school =D

Bûche de Noël is the French name for a chocolate yule log. This one is a heavenly flourless chocolate cake that's essentially a swiss roll rolled with a luscious chocolate whipped cream. Traditionally, Buche de Noel is decorated with icing sugar to resemble snow on a Yule log.

Perfect for chocolate lovers! Great for entertaining, deceptively easy to make. Perfect for people who can't have gluten. Serve warm with ice cream or whipped cream, or simply dusted with icing sugar. I flour the cake tin using cocoa powder so it won't leave white marks on the cake and keeps it totally gluten free. You can make an icing for the top or pour over melted chocolate.

This New York cheesecake recipe rivals the best! It uses amaretto instead of a lemon flavour and is VERY rich. It has no biscuit base to compete with its decadent flavour. Serves 16 lucky people and is best served with fresh sliced fruit or berries and fresh whipped cream.

This cake was traditionally a birthday cake in my friend's home. Her mother is from Hungary and only has this recipe in her head! Now it will be preserved . . . Note: hazelnuts may be toasted or un-toasted. The skins may be removed or left on.

A beautiful moist light cake with complex and full flavours of oranges and orange zest. Super easy to make, and people love it! Serve in wedges with a mound of whipped cream or ice cream. To make this completely gluten free - use gluten free baking powder. You can find this in health shops and in larger supermarkets.

Fantastic chef Hugh Fearnley-Whittingstall has donated to TREE AID this wonderful cake. Here’s an unusual flourless cake that makes a delightful dessert. Italian risotto rice is cooked slowly in milk until tender and creamy, then mixed with eggs, nuts, lemon and rum, and baked. It’s served with a red fruit salad.

This cake uses ground almonds to replace the flour usually found in cakes. Be careful when preparing the almonds in a food processor because electric machines bring out the oil in nuts. Whizz a handful at a time.

Made with whole oranges – simmered until very tender and then finely chopped – and ground almonds, this classic Spanish cake has a moist, light texture and a wonderful fresh flavour.
