A very simple but totally delicious vegetarian dish. Fennel is baked with cream, creme fraiche and Parmesan cheese. It's so simple and if you've never tried fennel before - be prepared to be delighted. This is an ideal accompaniment to many tomato based Italian dishes as the creaminess balances nicely with the tomato.

Classic crème brûlée, though time consuming, is easy to make and sure to impress! If you prefer to eat it cold, you can chill the crème brûlée after grilling it. The top will remain crunchy.

You can easily get the ingredients in any Asian supermarket. But be careful, this is super spicy - which is the best way to eat Tom Yum! You can use chicken instead of fish if you prefer.

In this attractive salad, full-flavoured shiitake and chestnut mushrooms are combined with slices of tender griddled duck, juicy orange segments, crunchy water chestnuts and rice, with a fresh ginger and honey dressing. Duck meat is in fact very lean, once the thick layer of fat and skin has been removed.

Succulent chicken thighs roasted with figs and lemon slices makes for a satisfying and impressive Mediterranean-inspired meal. The slightly sweet and sour sauce is perfect to serve with rice, and helps to caramelise the figs and lemon. Easy, delicious and if you feel the sauce isn't enough it can easily be doubled.

Just because you need to leave it to marinade overnight - don't miss out on this simply fantastic mix of summer flavours! Try it! It goes well with some goats cheese and garlic flat bread. It's even good tossed with some leftover pasta.

To create these succulent mini kebabs, marinated cubes of monkfish fillet and fresh mussels are threaded onto skewers with a selection of colourful vegetables, then lightly grilled. They make an extra special hot nibble to hand round at a celebration party or present on a buffet table.

Serve with frites for a true Belgian feast. This is a real get-together-in-the-kitchen-dish, as it is usually prepared in 3 or 4 batches every time in the same liquid, which gets better and better with each batch.
