I picked 4kg of blackberries the other day from the Walthamstow marshes in London (so much more than back in the country!) and made two batches of jam with 2kg (with and without apples, and froze the rest) this was the best. It has a bit of a Christmasy taste because of the cinnamon and nutmeg.

This was my mother's signature recipe. Simple, but classic - you can't go wrong. Slice it lengthwise, very thinly. Leftovers are delicious cold for sandwiches with wholegrain mustard.

I devised this recipe whilst suffering from a horrible stinker of a cold. If you're making this and don't have a cold, you may want to crank the seasoning (especially the chillies) down a bit, as I'd hate to be responsible for blowing the top of your head off. Anyway, it's full of vegetables and things with antiseptic properties and vitamins and good stuff. A squeeze of fresh lemon juice might be good at the end, as well.

After a painful (yummy, but ridiculously unhealthy) amount of experimenting with different recipes I came up with this one. I think it's pretty damn good, myself. Also, it's sooo much better if you can leave these in a fridge overnight, as this makes 'em far more fudgey (ie. far more YUMMY!) They go down great at school =D

As a confirmed chocoholic being put on a dairy free and wheat free diet was traumatic, but this pud has kept me on the straight and narrow. Be warned it is very rich!! Tips :- Use the water to rinse out the can before recycling it. If you do not like the desiccated coconut texture just leave it out.

When my mum became a coeliac the one thing she missed was stuffing! For 2 years we have been trying to find some, first bought it in Sainsbury's and that was good until they stopped the product so we have been experimenting ever since and now we have cracked it! The flavour and texture were an almost perfect match to Paxo's.

Frozen peas retain their nutrients much more than tinned, and they taste fresh and delicious. You can add more liquid (water or cream) depending how mushy you want your peas. Use semi-skimmed milk if you're watching your calories.

Inspired by the more traditional Lancashire hot-pot, this modern version is still slow-cooked for maximum flavour, but is lighter, using lean lamb neck fillet and more vegetables than the old recipe. If liked, sprinkle the top with a little tangy Lancashire cheese at the end of cooking.

This fruit salad is inspired by the classic summer drink, which is often garnished with so much fruit that it is almost a fruit salad in itself. A mixture of sweet melon, berries, pear and cucumber is marinated in Pimm's and then served in melon shells. A decoration of pretty borage flowers is a traditional finish.
