As chocoholic I am always trying to make up for all of my weekend indulgences by finding ways to satisfy my sweet tooth during the week without any of of the naughtiness. Don't be afraid to indulge with this low-fat recipe that still tastes great. It's really handy to make this recipe in a muffin or bun tin. That way, you can freeze them individually.

My tip for this cake is to soak the sultanas (and carrot if you like) in cold tea overnight if you can do this it keeps the cake nice and moist. Otherwise add something like apple sauce/chopped tinned prunes/ pineapple to the mix. I guess you can play around with ingredients as you wish – some recipes I found suggest using apple sauce instead of sugar or some half splenda half sugar to cut the sugar content down. Others suggest a tin of pineapple (crushed) to keep cake moist.

Very, very quick and easy, only six ingredients and no fat either!! I sometimes ask people to guess what is in the cake as it tastes very good. Serve sliced with butter in the traditional tea-loaf style. Easy to make and freezes very well.
