This recipe uses egg whites to keep the fat content low. You can find 500g cartons of liquid egg white at alot of supermarkets now, but you can of course use whole eggs if you prefer.

This is an excellent recipe where no butter, oil or any type of fat is added - it's virtually fat free. It is not to dry and not too moist. They also taste excellent! The icing is optional but if you want them to be a little sweet - spread icing on top!!

We will bet the Muffin Man never offered such healthy fare! Apple sauce replaces some of the fat, and fresh apples and oats add nutritious fibre. But these are still as delicious as any homemade muffin you can remember.
