Chicken thighs are used in this recipe, but skinless breasts could be used instead. Be careful not to overcook, as the result could be rather dry chicken. Serve with warm flour tortillas, spicy salsa and soured cream.

Hamburgers are always popular for casual meals, but can be high in saturated fat. This lighter version, made with lean minced pork, is just as flavoursome, and fresh apples and spring onions contribute to your five-a-day. They're delicious spread with sweet chilli sauce. Can also be barbecued.
