Make the most of aromatic, golden apricots when they're in season by using them in this attractive tart. It has a sweet orange shortcrust base and is topped with a crumbled flapjack-style mixture of oats, sultanas, hazelnuts and seeds. Forget about smothering toasted crumpets in butter; this low-fat topping is really yummy and much healthier. Lightly mashed bananas are mixed with creamy fromage frais and warm spices and piled onto crumpets, then finished by drizzling with honey and grilled until bubbling. It's the perfect quick sweet snack.

Although this is a hearty soup, laden with vegetables, it has a delicate flavour. Home-made stock is best, but you can use a good-quality bought stock (chilled or from a cube or powder); if using a cube or powder, do not add additional salt at the beginning of cooking as you may find these products provide enough salty seasoning.

Here’s a healthier version of a traditional favourite. Bake quick round biscuits, or buy some fancy cutters and encourage children to have a go at making gingerbread figures or stars, and give them dried fruit or nut decorations. Whatever the shape, theses spicy, crunchy biscuits taste terrific.

Quick, simple grilling is a good way to turn these low-calorie, zinc-filled treats into a regular favourite. Use lean back bacon for this dish as it is lower in fat than streaky bacon. Sweet-flavoured Wiltshire cure bacon would be ideal.
