This recipe uses egg whites to keep the fat content low. You can find 500g cartons of liquid egg white at alot of supermarkets now, but you can of course use whole eggs if you prefer.

They are so delicious - you wouldn't believe that something with prunes could be this good! They're also low in fat, with just about 5 grams per muffin. A great morning or afternoon snack!

A delicious source of fibre! My family have them almost every morning. Great healthy muffins! You may substitute chopped dates for the sultanas if you wish.

I received this recipe while living in New Zealand with a friend. His wife prepared a batch of these moist muffins for him. I 'sampled' so many that the next time, she doubled the recipe so there were plenty for both of us.

This is an excellent recipe where no butter, oil or any type of fat is added - it's virtually fat free. It is not to dry and not too moist. They also taste excellent! The icing is optional but if you want them to be a little sweet - spread icing on top!!

These muffins taste great right from the oven, but are even better the next day — if they last that long! Kids love them and it's a good way to sneak fruits, veggies and fibre into their diets.
