When our children were little my friend gave me this recipe which hides vegetables in the sauce; my children still love it as teenagers. It freezes very well so I am never without a quick meal to hand. It can be used on its own over pasta or with the addition of single cream makes a luxurious soup. A vegetarian version can be made without the bacon.

This is a terrific stock with roasted vegetables and caramelised onions as a base. The veggies are then added to a pot with water and herbs and simmered to make a rich, delicious stock. Use a sieve to remove the vegetables and you have two litres of stock. Freeze in ice cube bags to have stock on hand whenever you need it. The cooked vegetables make great baby food!

Here's a hearty and satisfying chilli – without the carne (meat) – that can be made in minutes. This version combines two varieties of beans with sweetcorn in a rich tomato sauce flavoured with herbs, fresh chilli and chilli sauce. Serve with boiled rice or plenty of warm crusty bread.
