This was a childhood memory that I was craving, so I called my nanny and she gave the recipe to me. The second I tasted it, I was flushed with happy thoughts. Enjoy with slices of apples for a healthy snack! Be creative: You can add peanut butter, nuts or chocolate sauce. Have fun and enjoy!

This recipe is one of many I have developed to utilise the bounty of aubergines my garden has produced this year. The kids will even love aubergines made this way!

This makes for a luxuriously rich vegetarian meal, prepared in only an hour thanks to a few shortcuts. Aubergine slices are dipped in egg and breadcrumbs, then baked instead of fried. The slices are layered with tomato pasta sauce, mozzarella and Parmesan.

Asparagus, bacon and goat cheese top this deliciously intriguing pizza. A great way to get kids to eat their asparagus!

Carrots, broccoli and onions, baked in a cheesy béchamel sauce, are delicious served as a light vegetarian supper dish, or as a side dish with meat or fish.

Adding chicken to this family favourite transforms it into a satisfying meal. Keep it healthy by serving with a green salad.

This recipe uses less milk and no thickener whatsoever! Very cheesy, too! You can either serve it from the pot, or top with buttered breadcrumbs and put in a 180 / Gas 4 oven to brown for half an hour, but we like ours fine without.

There are many versions of Welsh rarebit (or rabbit). The one here is richly flavoured with mature Cheddar cheese and thickened with breadcrumbs to add texture, and is spooned over thinly sliced red onions before being grilled until golden and bubbling. A spinach, apple and celery salad is the perfect partner.

Tip: Use cheese slices for this or grated Cheddar.

I think this was the first recipe I learnt!! There is no baking involved so these are much quicker. You boil the potatoes first, then make the filling, then pop them under the grill. Pure comfort food!

A feast of colourful vegetables makes a superb topping for a pizza-style ciabatta. The bread soaks up the aromatic roasting juices so that it is deliciously moist with a crunchy crust. If you want to boost your vegetable intake even more, serve it with a leafy herb salad.

Tempt children to enjoy vegetables with this easy leave-to-cook dish of vegetables and baked beans spiced up with barbecue sauce and with a top layer of melting smoked cheese and sliced potatoes. Delicious!

This classic Italian dish makes a great accompaniment to meat dishes, particularly those with a rich sauce or gravy.

This vegetarian version of the Italian classic uses no-precook pasta sheets so it is really quick to assemble.

These are just delicious! Even my boyfriend, who doesn't really like the tomato sauce on pizzas, loved these and just wanted more! We had them for lunch and were stuffed afterwards.
