Adding chicken to this family favourite transforms it into a satisfying meal. Keep it healthy by serving with a green salad.

This is the original Lebanese recipe which is found in the Middle East in places like Lebanon and in Lebanese restaurants. It tastes delicious and is healthy because you don't use the chicken skin. If you make it, I'd like to know what you think

This is the ultimate comfort food on a rainy night - and quick to prepare. Add the crushed chillies if you want a bit of spice.

This stylish-looking main course is surprisingly easy to make. The chicken breasts can be prepared in advance, ready for cooking, and kept, covered, in the fridge. Tagliatelle tossed with a little grated lemon zest would be a good accompaniment, plus ciabatta with olives or sun-dried tomatoes.

This is a great way to cook good-value drumsticks, so that they are moist and tender. A simple barbecue sauce and a mixture of vegetables and beans makes a healthy dish children will love. Serve with a leafy side salad.

This is a favourite in our house; it's quick, easy and tastes great. Using Parmesan gives a little more texture to breaded chicken.

Easiest recipe I've ever made! I received it when my eldest son was a baby -- today he is 17 and it is still a hit! Just a few minutes of preparation, and all day cooking. Dinner will be hot and ready whenever you have a chance to eat. Meat falls from the bone, and sauce can be used as a gravy for rice or chips. Enjoy!

These mouth-watering Indian-style snacks are very quick to make. Chapattis are the healthiest of Indian breads, as they are often made with wholemeal flour and are usually cooked on a dry griddle or pan without any fat. A yogurt-based raita, containing cucumber and tomato, is the perfect accompaniment.

This deep-dish pie has an Italian-style filling of succulent chunks of chicken, sliced peppers, mushrooms and black olives in a tomato sauce, and is topped with fresh rosemary scone wedges. A crunchy raw vegetable salad would be a good accompaniment to complete the meal.

A favourite with both adults and children, this is a simple healthy version of the popular deep-fried take-away snack. Served hot, with 5 per cent fat oven chips and fresh vegetables, it makes a good family meal. Served cold, the goujons are ideal for a picnic or a packed lunch.

Red pepper, spring onions and bean sprouts are tossed with strips of cooked chicken and noodles, then dressed with an Asian-inspired blend of peanut butter, soy sauce, chicken stock and fresh ginger.

This healthy chicken and vegetable casserole makes an easy mid-week meal. To make it even quicker, you could use supermarket washed-and-cut carrots and broccoli, ready to go from packet to pan. Mixed wild and long-grain rice goes well with the casserole, and adds sustaining and nourishing carbohydrate.
