I love pies (my favourite meal is pie and mash!) but I don't like the fat content of the pastry so I came up with this simple but very delicious idea. Use as you would any ordinary pastry or for pasties. All measurements are approximate. If you don't like the hassle of peeling the squash, you can split it in half, take out the seeds and roast it until it's soft (about 30 - 45 minutes).

A very simple microwave sponge pudding in less than 15 minutes with a texture between a sponge and a steamed pudding. Flavour it by adding raspberry jam, treacle or golden syrup to the bottom of the final bowl. Serve hot with custard.

You can make the batter the night before to save time. I sprinkle blueberries or nuts on top just before closing the waffle iron. These make a nice weekend breakfast or birthday surprise!

This light, almost fat-free whisked sponge, rolled up round a crushed fresh raspberry and passion fruit filling, makes a very pretty pudding. It's ideal for late summer, when raspberries are particularly sweet. Children will love it. Serve with home-made custard, if you like.
