Scrumptious American-style carrot cake is a great way to get children to eat vegetables without even noticing. The creamy icing here is lighter in fat than a traditional one, as it uses ricotta cheese.

The beetroot is not madness, it provides alot of moisture and tastes delicious. Leave yourself plenty of time to make this cake because it is quite a lengthy recipe. The cake is best eaten when it is still slightly warm. It is also really important to ice it at the last minute or the icing can lose its shine.

For all the gorgeous chocolate cakes around (and there are many), I still have a soft spot for these crunchy, chewy little buns. I include them partly because when looking for a recipe for them recently I found it suprisingly difficult to find one. Oh come on, don't tell me you don't like them! so get COOKING!!!

This is a really simple brownie recipe. it has been tried and tested many a time and they certainly dont last very long in the cupboard. I always use chocolate chunks when i bake them however walnuts are just as good, it is just a family preference. these morish gooey chocolate treats are an all year all occasion must bake.

This is a perfect cake for celebrations which need to be made ahead of time. It is a stiff cake with a moist texture so perfect for carving for novelty cakes. Wonderful torted with jam and buttercream or just left and covered with marzipan/icing, this cake is so versatile you can pretty much do anything with it! It will never curdle and is so simple even my 3 year old has made it, never fails and always tastes perfect!

This was my attempt to make brownies lower in fat. I think you'll agree that they are just as gooey and indulgent as regular brownies. The puréed prunes keep them moist and dark in colour.

Fairy cakes are easy to prepare and always popular with children. Using ricotta in the topping makes a lighter, fresher alternative to the more usual glacé icing. The cakes are best iced shortly before serving.

This is an extremely easy recipe. I always use a flat rectangular baking tray for it so it bakes through but I bet you can use the loaf tin too and it would come out beautifully. This cake serves a legion of hungry flatmates and co-workers for 2 days but then you'll have to bake a new one.

Taking the traditional Victoria sponge variants of chocolate and coffee and putting them together! It all came about from the other half's love coffee chocolates. I suggest you should be familiar with making sponges before attempting this, but it's pretty easy.
