This is a crunchy, wonderfully satisfying salad that is fab with grilled chicken leftover from yesterday's barbecue. The dressing is sweet and sour, mingling brown sugar with soy sauce and rice vinegar. Fried rice noddles add the crunch.

In Asia, there are different kinds of 'noodle soup'. This one is a great comfort food on a cold day, but also light and healthy. Quantities are arbitrary - adjust to own taste. Very important to add the shallots as they give the fragrance and flavour. Instead of egg noodles, sometimes I use macaroni. If you are adventurous, eat with chopped hot chilli pepper or add some dried chilli flakes to make the soup spicy.

This is a really basic way to roast peppers for use in any recipe. Choose any colour peppers you like, or use a variety of colours. It's even quicker if you use the grill. After they are roasted you can add olive oil and balsamic vinegar, or lightly sauté in olive oil and garlic to serve with feta cheese on crunchy toast.

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.
