Made with fromage frais or yogurt, this rich, smooth and refreshing dressing is lower in fat than traditional creamy dressings based on mayonnaise. It can be stored in the fridge for 1–2 days.

A vinaigrette can be mixed specially for a salad or it can be made in a larger quantity, to use as required – it will keep in the fridge for several weeks. If made ahead, store it in a screw-top jar and shake well just before using.

This dressing is great with artichokes, asparagus, or green salad, and it's one of the easiest recipes I have! Using a good quality olive oil makes a big difference in this dressing.
