Most traditional recipes for crème caramel are made with a sugar-based caramel and a rich creamy custard. The fruity version here uses apple juice both for the caramel and in the custard, thus reducing the fat and sugar content and making it dairy free. Served with blackberries, or another seasonal fruit, this is a delicious treat for family or friends.

This is a very widespread snack in the Balkans. I've eaten this in Slovenia, Croatia, Serbia, Macedonia and Bosnia - Turkey has got something similar too.

I love pies (my favourite meal is pie and mash!) but I don't like the fat content of the pastry so I came up with this simple but very delicious idea. Use as you would any ordinary pastry or for pasties. All measurements are approximate. If you don't like the hassle of peeling the squash, you can split it in half, take out the seeds and roast it until it's soft (about 30 - 45 minutes).

Based on an old-fashioned English recipe, but with an American influence, this satisfying savoury pudding is made up of layers of bread and vegetables with a cheesy egg custard poured over.
