I make this houmous all the time. It only takes a few minutes to prepare, and it's healthier than shop-bought without the oil. Increase or decrease the ingredients as desired, especially the chillies! Serve with tortilla crisps, pitta triangles or fresh vegetables. Add more of the reserved chickpea liquid for a smoother dip.

These spicy chickpea cakes are a popular street food all over the Middle East. Served in pitta pockets with a colourful crunchy salad, they are deliciously healthy as well as fun to eat.

This is a great recipe for falafel. Everyone that I have made it for loves it. Delicious served with cucumber sauce in a pitta with tomatoes.

Toasted pitta bread pieces are tossed with crisp cos lettuce, spring onions, cucumber, fresh tomatoes and a flavourful Middle Eastern dressing in this salad. Sumac, a traditional spice, is available from Middle Eastern grocers. It may be left out of this salad, but I think the flavour is important to the overall taste.

Bulghur wheat makes a tasty base for a fast salad. Here it is combined with herbs, olives, some al dente vegetables and crumbly feta cheese, all tossed in a spicy dressing. Great with iceberg lettuce and chunks of sesame-seed bread. Delicious!

This is a deliciously healthy and filling salad. The lentils are cooked with garlic and lemon plus a pinch of cumin, then dressed while warm. I had a minty lemonade when I was travelling in the Middle East. I wanted to try and immitate it. It cools you down on a hot summer day! Adjust the amount of mint to taste.

Wonderfully exotic and colourful, this vegetarian salad captures the flavours of ancient Persian cooking. Dates and sultanas are gently simmered with wine, spices and garlic, to flavour couscous, and then topped with roasted butternut and patty pan squashes, peppers and orange.
