This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

This banana and toffee tart is well worth the wait and requires little actual prep time. I like to use hob nobs but digestives or shortbread work well too.

I adored black forest gateaux in the 70s and loved trifle so decided I would fuse the two. You can make it all from scratch but also easy to substitute ready made goods if you don't have the inclination. The ingredients are split to enable you to decide at each 'layer'.

These are decadently chocolaty cupcakes, infused with coconut and topped with chocolate ganache. Using 85% cocoa chocolate ensures a very rich cupcake.

A deliciously decadent cheesecake recipe. The cake is layered with crushed Amaretti biscuits, soft cheese, mascarpone, sponge fingers and coffee liqueur.

This is a very moist cake that looks and tastes delicious too! It has just the right amount of sugar needed. The glaze makes the cake shiny and keeps its flavour sealed for many days. But you will soon find out that it's not necessary as your familiy will finish it in no time! I like to use a classic bundt pan as it makes the cake look great! You can buy them in any specialty cook shop. Try and have all your ingredients at room temp too.

I've been Diagnosed as allergic to Dairy and Muffins on a sunday morning for breakfast was just too good to give up!! You can Replace the rasberries with other fruits - Blueberries, Strawberries, Apple, Rubarb, Dried Fruits, Banannas even Chocolate Chips.

Really quick to make soup and really tasty, the lemony flavour makes it perfect for summer starters or light lunches and the garlic gives it a bit of a kick! Hope you enjoy as much as I did!

Banana muffins make a healthy snack for children after school. They are so easy to make and freeze well too. So, make these instead of throwing away those brown bananas!

This is a really simple brownie recipe. it has been tried and tested many a time and they certainly dont last very long in the cupboard. I always use chocolate chunks when i bake them however walnuts are just as good, it is just a family preference. these morish gooey chocolate treats are an all year all occasion must bake.
