An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

Instead of the usual chilli con carne, try this healthy tofu chilli that's chock-a-block with beans and veggies, too. For even more veg, try adding a chopped red pepper and some diced courgette.

Slim pasta spirals called fusilli are delicious cooked in a casserole of beef and vegetables. The dried, uncooked pasta is added towards the end of the cooking time so that it retains its al dente texture while still absorbing the savoury flavours of the meat, vegetables and oregano in the rich stew.

This was a staple recipe in my late teens/early twenties and I still use it now if I want to make an easy throw-together tea for lots of people which is filling and cheap!

A delicious simple soup without too much heat, excellent as a wintery starter to a dinner party. The spice works wonderfully with the sweetness of the parsnips. Serve with crusty white bread.

This chilli is easy to throw together using fresh ingredients. Eat as is with some crusty bread, or use it to top a jacket potato. I like it with grated Cheddar on top.
