A spoonful of mustard peps up this simple, vegetable-rich pork stew. Fluffy dumplings served on top help to mop up every bit of the full-flavoured sauce, and turn the stew into a well-balanced meal in a bowl.

Hearty and traditional Irish lamb stew. It's best to refrigerate the stew overnight, and reheat it the next day for eating. This soup 'ages' well!

Hearty fish steaks baked with garlic, tomatoes and herbs make a dish redolent of the Mediterranean coast. Try serving with rice or crusty bread and a green salad, or a side dish of green vegetables such as Roasted Asparagus with Caramelised Shallot Dressing or Braised Fennel (both on this website).

Slim pasta spirals called fusilli are delicious cooked in a casserole of beef and vegetables. The dried, uncooked pasta is added towards the end of the cooking time so that it retains its al dente texture while still absorbing the savoury flavours of the meat, vegetables and oregano in the rich stew.

In Spain, the home of this spicy dish, chickpeas are very popular and are often stewed with a small amount of meat and a vegetable or two to make hearty one-pot feasts. Serve this with chunks of rustic sourdough bread on the side, so that you can dip it in to enjoy every drop of the delicious gravy.

A great rendition of the old-fashioned filling that's normally steamed in a pudding. This is my version which has tomato passata and red wine in it, which gives it a fantastic flavour. If you can't find it pre-packed, ask your local butcher for a mix of steak and kidney.
