Kasha, or buckwheat, is one the fastest grains to cook. It's a non-wheat grain that has a nutty texture and mildly aromatic flavour which goes very well with vegetables and a creamy cheese sauce.

Although this is a hearty soup, laden with vegetables, it has a delicate flavour. Home-made stock is best, but you can use a good-quality bought stock (chilled or from a cube or powder); if using a cube or powder, do not add additional salt at the beginning of cooking as you may find these products provide enough salty seasoning.

You can also make this as one large pie, but I prefer to make it with individual ramekins. The cream adds richness and brings out the delcious taste of the mushrooms, thyme and leek. An easy and quick way to get your family to eat vegetables!

Here's a hearty and satisfying chilli – without the carne (meat) – that can be made in minutes. This version combines two varieties of beans with sweetcorn in a rich tomato sauce flavoured with herbs, fresh chilli and chilli sauce. Serve with boiled rice or plenty of warm crusty bread.
