Spicy and sweet, this delicious chutney goes well with breads, cheeses and chicken. This makes a large batch - great for sharing with neighbours and friends at Christmas!

So simple, but always gets raves! Add leftover steak, poultry or roast beef for a quick supper fix.

This simple dish is perfect for using up leftover cooked potatoes, brussels sprouts, cabbage, kale or spinach. Top with poached eggs for a scrumptious lunch.

This always goes down well with my family. I always make it at Christmastime, but also throughout the year when cooking white meats. It's also welcomed by my vegetarian family/friends.

An impressive centrepiece for a festive vegetarian meal, this crisp filo pastry ring is filled with mushrooms, chestnuts, vivid, tart cranberries and cubes of tangy goat's cheese. Serve with cranberry sauce and a mixed leaf salad.

Serve as part of an Irish breakfast or as a potato side dish. A great use of leftover mash.

I have this on my menu at the moment, I serve it straight from the oven under a Juicy Rib Eye Steak its glorious when the oozing cheese mixes with the juices from the rib eye. Its very popular with my customers and my girlfriend loves it. Why not try it with a big lump of Mature Cashel Blue Cheese melted on the top and a wild mushroom sauce poured over it all. Very heavy and full of fat but great as a treat every now and then.

An adaption of the ancient preserving technique. Spicy, sweet, sour onions.

An interesting and spicy solution to the leftover turkey dilemma on Boxing Day. Leftover turkey is cooked with tomatoes and green chillies, spiced with cayenne and cumin and finished off with fresh avocado and coriander for a zesty, unique soup.

This salad is full of robust flavours - a perfect side to a roast dinner, or top with a chicken breast to make it a supper on its own.

Red cabbage is a perfect winter dish. It is the classic accompaniment to roast pork and game dishes and also goes well with ham at Christmas or sausages, any day of the week.

This is a lovely crunchy salad for winter, full of contrasting tastes and tossed with an unusual dressing made from cranberry sauce and walnut oil. Red cabbage makes an interesting base, but does tend to stain the other ingredients, so serve the salad as soon as everything has been mixed together.

When you roast a turkey, don't throw away the carcass. Instead, use it to make this wonderfully rich-tasting soup. Reminiscent of an Italian minestrone, it is packed with vegetables, barley, turkey meat and chestnuts – a really satisfying bowl of soup. Serve with warm, crusty wholemeal bread.
