This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

An incredibly easy way to round off a dinner party - but only if they aren't driving! I like to serve two small scoops in tiny dishes with shortbread, biscotti or amaretti. You can vary this any way you like - try Cointreau or Drambuie (my favourite), or add a few drops of real vanilla extract or some of the vanilla seeds.

Here are some luxurious little ‘moneybag’ pastries filled with a ginger-spiced mixture of dried fruit, apple and walnuts. The dried fruits are first soaked in brandy, although you can replace the alcohol with fresh orange juice if you prefer. Try these at Christmas-time as a lower-fat alternative to mince pies.

This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge

A late friend from london gave me this recipe 30 years ago (her name was Diz-hence the name) , and whoever tries this recipe makes the Plum Bread for life. So Simple - So Tasty-Better than any bought & lasts for weeks. Being as it keeps so well I make 2 at a time - can freeze. I spread with butter (perhaps slice of cheese) , but fine on own. Also can warm a slice for min. in microwave for quick pudding.

This is a delicious variation on a classic made with the light and heavenly Italian Christmas bread. Panettone is similar to brioche but studded with raisins and candied orange and lemon peel. I have this on my menu at the moment, I serve it straight from the oven under a Juicy Rib Eye Steak its glorious when the oozing cheese mixes with the juices from the rib eye. Its very popular with my customers and my girlfriend loves it. Why not try it with a big lump of Mature Cashel Blue Cheese melted on the top and a wild mushroom sauce poured over it all. Very heavy and full of fat but great as a treat every now and then.

When you roast a turkey, don't throw away the carcass. Instead, use it to make this wonderfully rich-tasting soup. Reminiscent of an Italian minestrone, it is packed with vegetables, barley, turkey meat and chestnuts – a really satisfying bowl of soup. Serve with warm, crusty wholemeal bread.
