Spicy and sweet, this delicious chutney goes well with breads, cheeses and chicken. This makes a large batch - great for sharing with neighbours and friends at Christmas!

This relish has a great flavour, especially with the addition of celery. It goes well on leftover turkey in a sandwich on Boxing Day. Chopped nuts can be added if desired.

This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

Local chef Barny Haughton has donated to TREE AID a wonderful, festive tree cake. Barny believes: "TREE AID's Christmas Cake Bake is a great chance for people to get togther to bake and eat beautiful cakes; whilst also knowing that they are supporting Arica's poorest people to fight poverty and environmental degraduation sustainably."

I adored black forest gateaux in the 70s and loved trifle so decided I would fuse the two. You can make it all from scratch but also easy to substitute ready made goods if you don't have the inclination. The ingredients are split to enable you to decide at each 'layer'.

This is a simple and delicious recipe! Serve with toasted ciabatta, crackers, carrots and celery sticks. This dip is also great cold.

An incredibly easy way to round off a dinner party - but only if they aren't driving! I like to serve two small scoops in tiny dishes with shortbread, biscotti or amaretti. You can vary this any way you like - try Cointreau or Drambuie (my favourite), or add a few drops of real vanilla extract or some of the vanilla seeds.

This is a scrumptious use of leftover Christmas turkey. Serve on little gem leaves, or use to fill sandwiches. Then stand back and enjoy the compliments!

Fresh cranberries are cooked with orange zest, orange juice, lemon juice and brandy. This is a lovely holiday sauce to serve with roasts, and to put on the sandwiches you make with the leftovers!

Here are some luxurious little ‘moneybag’ pastries filled with a ginger-spiced mixture of dried fruit, apple and walnuts. The dried fruits are first soaked in brandy, although you can replace the alcohol with fresh orange juice if you prefer. Try these at Christmas-time as a lower-fat alternative to mince pies.

This is a favourite nibble and canapé year-round, but especially welcome at Christmas and New Year's parties.

This recipe is a lovely alternative to the standard sponge trifle at Christmas. It is an attractive layered dessert. This recipe uses a shop-bought Christmas pudding and a tub of premium custard. Christmas cake works well too but it is not as moist.

Mixed salad greens, toasted almonds, red onion and crumbled blue cheese are tossed in a fresh cranberry dressing for an impressive and easy salad! Perfect for Christmas lunch or Boxing Day.

This is a chunky cranberry sauce with apple, sultanas and spices. I suppose it's more like a chutney, but either way it's great with leftover turkey on Boxing Day.

This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge
