One of my favourite dishes when I head back home; it combines hard-boiled eggs with the subtle flavour of anise and the deep brown hues of black tea and soy. The cracked patterns from the broken shells make these quite attractive! I eat these sliced in quarters and chilled as a side dish, starter or snack. Recipe courtesy of Mum.

Tofu is coated with cornflour and then deep fried. It's served with spring onions and hoi-sin sauce. Use any Asian-style dipping sauce you prefer.

This is an easy way to use up small amounts of leftover chicken, and no one fights over white or dark meat! Just wrap leftover chicken in wonton wrappers and bake until crispy. You can serve them plain or with soy sauce or sweet chilli sauce. You can buy wonton wrappers at Chinese and Asian supermarkets.

Delicate Vietnamese-style spring roll wrappers are filled with rice noodles, diced prawns, shredded carrot, lettuce and basil and dipped in warm hoi-sin sauce. You can buy the wrappers at an Asian supermarket.

Follow this recipe carefully and you will be rewarded with comforting, fluffy and tasty Chinese steamed buns. "Hom Bao" refers to any filled Chinese buns, but if you want to fill these with traditional barbecue pork filling before steaming, follow the recipe for Char Siu Bao, also on this site.

This recipe makes enough for a party or you can freeze them in batches. Filled with pork, pak choi, water chestnuts and other wonderful ingredients, these tasty wontons are well worth making. You can buy wonton wrappers in Asian shops.
